Turkey Cutlets with Black Bean
Sauce and Tomato Sauce

her friend when they worked in
the U.S. Embassy inMexico City.
Serves: 6
This is a lively pairing of pan-
cooked slices of turkey breast
and black beans charged up with
tomatoes, chili powder and cori-
ander. Rice, speckled with ker-
nels of corn would be a natural
accompaniment. For dessert,
serve fresh berries topped with a
pure ripe mango or papaya and a
sprinkling of cinnamon.
2-1/2 tablespoonsoliveoil
**6 thin slices uncooked turkey
breast (about 1-1/4pounds)
Salt andpepper to taste
1onion, chopped
2garliccloves, shopped
½greenbell pepper, cored, seeded
2 teaspoons chili powder
1 teaspoonWorcestershiresauce
1cupcannedblackbeans, drained
1 cup chopped canned plum to-
matoes,withtheir juice
¼ cup chopped coriander (cilant-
ro) (optional)
In a skillet, heat the oil and then
lightly brown the turkey slices on
bothsides;removeturkeytoawarm
plate and seasonwith salt and pep-
per. Stir intheonionandgarlic, and
slowly for 3-4minutes; add the bell
pepper and chili powder, and cook
one minute. Stir in the Worcester-
shire sauce, black beans and toma-
toes. Bring to a simmer, cover and
simmer5minutes.
Return the turkey slices to the
skillet, cover and simmer until the
turkey is cooked through and the
flavor blended, about -7 minutes.
Transfer the turkey cutlets toaplat-
ter and spoon over the sauce. Top
with sprinklings of the coriander, if
youwish, andservepipinghot.
