Slow Cooker Skirt Steak in a Rub

Serves: 2-4


  • 2 pounds skirt steak
  • 1-½  teaspoon salt
  • ½ teaspoon pepper
  • 1 lime, juiced
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 10 cloves garlic, minced
  • 2 teaspoons oregano
  • ¼ cup fresh cilantro, roughly chopped


Cut skirt steak in half or thirds to fit in slow cooker. Season with salt and pepper. Set aside.

In a small bowl, combine lime juice, cumin, paprika, garlic and oregano. Rub all over the skirt steak.

Place the steak into a 6-quart slow cooker. Sprinkle the cilantro on top.

Cover and cook on low for four hours.

Remove pot from base and partially open lid. Let rest for 10 minutes. Slice.

I served this with a salad and a mixture of rice and pasta in a creamy cheese sauce with broccoli. You can also serve this with tortillas.
