Rainbow Skirt Steak Salad

  • 1 piece skirt steak
  • 1 red pepper, sliced thin
  • 1 yellow pepper, sliced thin
  • 1 orange pepper, sliced thin
  • 1 small red onion, sliced thin
  • 2 handfuls of baby arugula
  • Salt
  • Pepper
  • Garlic powder
  • Olive oil
  • Peter Luger Sauce


Salt and pepper the steak and put to the side.

Preheat oven to 400 degrees. Put the pepper and onions on a baking sheet.  Drizzle olive oil, salt, pepper and garlic powder over the vegetables. Mix so they are coated.

Put in oven for 20 minutes, mixing them after 10 minutes.

Heat a grill pan until very hot. Put the skirt steak on the pan and cook six minutes per side. (You can always broil or pan fry it.)

Remove steak and let stand for at least 10 minutes.

Plate your arugula between two dishes. Add a little sea salt on each. Put the sliced steak over the arugula and add the vegetables. Pour a little Peter Luger Sauce … Enjoy!
