Chicken Soup

  • 8 pieces dark meat chicken, skinned (dark meat makes a much richer broth)
  • -or-
  • Whole chicken cut into 8 pieces
  •  1 package of soup greens. If you can’t find them pre-packaged I use this:
  • 2 carrots, sliced
  • 1 stalk celery
  • 1 small parsnip
  • 1 small turnip
  • 1 small leek
  • 1 medium onion
  • 1 small potato
  • 1 small sweet potato
  • dill
  • parsley
  • thyme
  • 1 can low sodium chicken broth


Season chicken well with salt, pepper. Put in pot. Cover with cold water. Add all the diced vegetables, together with the dill, parsley and thyme. Cook on medium heat.   Add 1 can low sodium chicken broth. Let cook until meat is ready to come off the bones. Remove chicken to cool. Continue simmering the broth. Shred the chicken.  Remove the dill, parsley and thyme and return shredded chicken to the pot.
