Muffin Tin Turkey Meatloaf with Mashed Sweet Potatoes

Cooking spray for muffin tin

  • 1 pound ground turkey
  • ½ cup matzo meal (or breadcrumbs or panko crumbs)
  • 1 large egg, beaten
  • 4 cloves of garlic (I like garlic)
  • 1 large shallot, diced
  • 1 teaspoon Worcestershire sauce
  • 1-1/2  teaspoons Italian herbs
  • (I used a combination of: parsley, sage, rosemary, thyme, caraway and coriander)
  • 1 teaspoon tomato paste
  • Kosher salt
  • Freshly ground pepper
  • ¼ cup ketchup
  • 1 tablespoon brown sugar
  • 2 large sweet potatoes


Preheat oven to 350 degrees. Spray muffin tin with cooking spray.

In a large bowl, mix ground turkey, breadcrumbs, egg and garlic. Add Worcestershire, mixture of herbs, tomato paste, salt and pepper, and mix well. Divide mixture evenly between 12 muffin tins.

In a small bowl, whisk together ketchup and brown sugar.  Brush half the ketchup mixture over the meatloaf.

Bake for 35 minutes, until cooked through. Remove from oven and brush meatloaf with remaining half of ketchup mixture. 

Peel  and cut sweet potatoes into small pieces. Boil until soft and tender. Drain. Either use a masher or food processor to texture you like. Add some butter and cinnamon. Spoon potatoes over meatloaf. Voila!
