Shrimp and Butter Bean Salad

Serves: 4

Ingredients:

  • 1 pound cooked fresh shrimp
  • 8 ounces grape tomatoes
  • 1 small red onion, chopped
  • 2 15 ounce cans butter beans, rinsed and drained
  • 1 fennel bulb, sliced thin
  • 2 rib celery, sliced
  • 1/3 cup of fresh basil
  • 1 teaspoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic, minced
  • ¾ teaspoon Kosher salt
  • 1 pinch of black pepper
  • ¼ teaspoon red pepper flakes
  • 4 teaspoons of extra virgin olive oil

Directions:

In a large bowl, combine shrimp, tomatoes, onion, beans, fennel, celery and half the basil. In a small bowl, whisk together lemon zest, juice, mustard, garlic, salt, pepper, and red pepper flakes.

Pour dressing over the shrimp and vegetables and toss gently to coat. Sprinkle with remaining basil.
