Garlic Shrimp and Chickpeas

 Serves: 4

  •  2 – 15 ounce can chickpeas, drained and rinsed
  • 6 tablespoons extra virgin olive oil
  • Kosher salt
  • 1-1/4 pounds medium shrimp, peeled and deveined
  • 3 cloves of garlic, minced (I used 5, I like garlic)
  • 1 teaspoon lemon zest
  • ¼ teaspoon red pepper flakes (more if you like spicy)
  • ½ cup fresh chopped parsley
  • Lemon wedges for serving

 

Pre-heat oven to 450 degrees. Toss chickpeas w/ tablespoon oil, ½ teaspoon salt. Put on a pan, single layer. Bake 20 minutes until golden. Rack should be in the upper third of your oven. Toss the shrimp with 4 tablespoons oil, garlic, lemon zest, red pepper flakes and 1 teaspoon salt. Marinate 10 minutes. Add to the chickpeas, bake until shrimp are pink, about 5-7 minutes.
