Found this in the Savory Magazine from Stop & Shop.
- 1 small apple
- 3 sheets of matzo, broken into 1” pieces
- 2 large eggs
- 1/3 cup sugar
- 3 tablespoons olive oil, plus a little more for greasing pan
- ¾ teaspoons ground cinnamon
- ¼ teaspoon salt
- ¼ cup chopped walnuts
- 1/3 cup golden raisins
Preheat oven to 350 degrees. Lightly grease insides of four 6-ounce ramekins with some olive oil. Peel, core and finely chop the apple. In a medium bowl soak the matzo in cool water until soft, but not falling apart (about 2-3 minutes).
In another small bowl, whisk the eggs, sugar, oil, cinnamon, and salt. Drain the matzo and press out any excess water and add to the egg mixture along with the apple walnut and raisins. Stir until well combined.
Divide the mixture among the greased ramekins. Place ramekins on a baking sheet and place in oven. Baked 25-30 minutes until set. Serve warm or room temperature.
++ You can use a lightly greased 1 quart baking dish if you do not have ramekins. Bake at 350 for 40-45 minutes.
