FROM RISE: Food For Thought By Tianna Tyler, Shore Corps Educator

The high school students in the Rockaway Initiative for Sustainability and Equity’s (RISE) Shore Corps program have kicked off their Spring 2020 Semester, and it’s off to a great start. The students have been covering a variety of topics, and their continuous excitement to learn is inspiring. All the students, from those in their first year to those in their fourth, have been diving into the sessions and getting hands-on experience that they can take with them on their personal, educational, and career journey.
The second-year Shore Corps students have been learning the basics of nutrition. This group focuses on food access, urban farming, and cooking healthy meals. The curriculum has covered topics such as salts, sugars, and fats, and the effects they have on the body. Each class begins with students learning about a different food group. Then they work with our Culinary Chef Tiffany to get hands-on experience putting the lessons they have learned into practice by making simple, easy, and healthy meals. The students enjoy working together and learning how they can integrate healthy meals into their diets.
