Chicken Calabrese

  • 2 chicken breast
  • 1 handful of fresh basil
  • 4 slices of mozzarella cheese
  • Salt and Pepper
  • 1 tbsp olive oil
  • 1 pint cherry tomatoes, halved (8oz)
  • 2 garlic cloves, crushed
  • 3/4 cup of white wine
  • 1 oz Parmesan cheese



Season the chicken breast on each side with salt and pepper.

In a frying pan, add the olive oil on medium heat and caramelise the chicken breast on each side.

Once chicken is caramelised nicely on each side, add crushed garlic to the frying pan followed by the tomatoes.

Deglaze the pan with the white wine and grate the Parmesan cheese over the chicken and tomatoes.

Scrunch up the basil and slice it so it shred’s and add to pan.

Cut four slices of mozzarella cheese and place two slices over each breast, or enough to cover whole breasts.

Bake in oven for 15-20 min at 400°F – 200°C. Serve immediately with tomatoes and juices on side.
