Slow Cooker Chicken and Meatballs

Recipe Swap

 Serves: 6

Tried something different; bought prepackaged Italian meatballs (no sauce).  A little of this, a little of that.

  • 1 whole chicken cut up
  • 1 package of frozen meatballs (no sauce)
  • 1 medium onion, diced
  • 1 package sliced portobello mushrooms
  • 2 cups chicken broth
  • ½ cup white wine
  • 1 jar (7 ounces) sun-dried tomatoes, drained
  • 4 cloves of garlic, diced
  • 1 teaspoon smoked paprika
  • ½ teaspoon thyme
  • ½ teaspoon parsley
  • ½ teaspoon rosemary
  • ½ teaspoon sage
  • ½ teaspoon chili powder
  • ½ teaspoon coriander
  • 1 teaspoon salt
  • 1 teaspoon pepper

Spray crockpot with olive oil. Put onions and garlic on the bottom. Mix all the dry ingredients. Pat chicken dry and cover with the dry rub. Add to the crockpot. Add the meatballs (keep frozen until ready to use). Add the mushrooms and sun-dried tomatoes. Then add the broth and wine.

Put the lid on and cook on slow for six hours. Put over yellow rice or egg noodles.
