Leftover Turkey in Crescent Rolls

Ingredients: 2 cups stuffing 1-1/2 cups cubed turkey ½ cup gravy 1 can Pillsbury Crescent Rolls 1 cup cranberry sauce   Directions: Heat oven to 375 degrees. In a pot, combine stuffing, turkey and gravy. Cook over medium high heat until hot, stirring constantly. Roll out the rectangle crescent rolls. Split them at the seams. Add the mixture in the middle of the rolls and roll up. Put in a sprayed glass baking dish. Bake 18-22 minutes until crescents are golden brown. Put cranberry sauce on top. *If you have vegetables left over, you can add that to the mixture. I also have used biscuits....

Turkey Meatloaf with Pico de Gallo

Serves: 4 Ingredients: 1-1/2 pounds of fresh ground turkey 2 eggs 3/4 cup unseasoned panko crumbs 1 container of Pico de Gallo (you can substitute salsa)   Directions: In a medium bowl, add two eggs. Scramble them. Add the panko crumbs and toss to they are coated. Add the ground turkey. Mix.  Add ¾ container of Pico de Gallo. Mix thoroughly. Put the mixture on a baking sheet on parchment paper. Chicken Cutlets with Mushrooms and Peas

Serves: 4 Ingredients: 1 pound skinless, thin sliced chicken cutlets 3 tablespoons all-purpose flour 2 tablespoons olive oil 8 ounce package Portobello mushrooms, sliced thin 4-5 cloves garlic, minced 1/3 cup chicken broth 1 cup frozen peas Directions: Salt and pepper the cutlets. In a large dish, add flour and coat the chicken. In a 12 inch nonstick skillet, heat the oil and add the cutlets. Cook on medium high heat, 3-5 minutes per side, until browned. Remove to a plate. Air Fryer Rosemary and Garlic Lamb Chops

Andy is the air fryer king. Ingredients: 1 rack lamb (7-8 chops) 3 tablespoons olive oil 2 tablespoons chopped fresh rosemary 1 teaspoon minced fresh garlic (about 3 cloves) 1 teaspoon salt ½ teaspoon black pepper   Directions: Pat the lamb chops dry. Baked Eggplant Parmesan

Crispy Air Fryer Chicken Wings

Ingredients: 1 package chicken wings Garlic powder Onion powder Paprika Salt and pepper (optional) Olive Oil   Directions: Pat chicken wings with paper towels. They should be dry. Add them to medium bowl.  Drizzle with olive oil. Sprinkle garlic powder, onion powder and paprika, salt and pepper. Toss to coat. Preheat air fryer at 400 degrees for 2 minutes. Layer the wings, do not overlap them. Cook for 10 minutes. Flip the wings and cook another 8 minutes. If you want a little more crispy, add another minute.

Roasted Chickpeas with Shrimp

Serves: 2 Ingredients: 1 1/5 ounce can of low sodium chickpeas, rinsed and drained 1-1/2 pound peeled and deveined shrimp 2 tablespoons olive oil 3 tablespoons fresh lemon juice 1 teaspoon of lemon zest 4 cloves minced garlic ½ teaspoon red pepper flakes 1-1/2 teaspoons sea salt 1 lemon, sliced 1 teaspoon Italian herbs ¼ cup chopped fresh parsley (optional) Directions: Preheat oven to 450 degrees.
