Rainbow Skirt Steak Salad

Serves: 2 Ingredients: 1 piece skirt steak 1 red pepper, sliced thin 1 yellow pepper, sliced thin 1 orange pepper, sliced thin 1 small red onion, sliced thin 2 handfuls of baby arugula Salt Pepper Garlic powder Olive oil Peter Lugers Sauce   Directions: Salt and pepper the steak and put to the side. RBVL Champs Crowned

The champs have been crowned and the 2022 Rockaway Beach Volleyball League season has come to an end. Riis Park was full of activity on Saturday, August 13 for the RBVL championship as the teams battled it out in hope of winning the coveted championship sweatshirt. Ten teams, one from each section, took home the sweatshirt and bragging rights for at least a year. Sauteed Shrimp Over Whole Wheat Noodles

Serves: 2 Ingredients: 1-1/2 pound peeled and deveined shrimp 1 package no yolk whole wheat noodles ½ pint of cherry tomatoes, sliced in half 1 tablespoon unsalted butter 2 tablespoons olive oil 3 tablespoons fresh lemon juice 1 teaspoon of lemon zest 4 cloves minced garlic ½ teaspoon red pepper flakes 1-1/2 teaspoons sea salt 1 lemon, sliced ¼ cup chopped fresh basil (optional) Directions: In a small bowl, combine one tablespoon olive oil, ½ teaspoon salt, zest of one lemon, garlic and red pepper flakes. Oven Baked Dover Sole

 Ingredients: 1 package Dover Sole filets Horseradish Sauce Panko Crumbs Directions: Preheat oven to 425 degrees. Oil the baking tray. Spoon horseradish sauce on each fillet. Roll the fish into the panko crumbs. Put the breaded fish on the baking sheet and bake 3 minutes. Flip the fillets and bake another 4-6 minutes. The fish should be opaque, but not dry.

 Ingredients: 2 bone-in pork chops 1 teaspoon kosher salt, ¼ teaspoon black pepper, 1 tablespoon cumin, 1 tablespoon paprika 2 tablespoons whole grain dijon mustard 2 tablespoons brown sugar. Directions: Brown sugar: It helps tenderize and gives the meat a nice, caramelized crust. Rinse the bone-in pork chops in cold water to get rid of any debris, then pat dry with paper towels. Delicious Biscuits

 My friend Judith gave me her recipe. Ingredients: 3 cups flour 2 cups milk (add a splash more if batter seems too thick) 3 tsp baking powder 2 tsp salt 3 heaping tablespoons mayonnaise (I used light mayo) Directions: Mix well. Spoon into a 12-muffin tin. Bake at 350 degrees for 18-20 minutes, depending on the heat of your oven. These muffins do not brown so you can put them under the boiler for a minute. By Sharon Feldman
