Rainbow Skirt Steak Salad
- 1 piece skirt steak
- 1 red pepper, sliced thin
- 1 yellow pepper, sliced thin
- 1 orange pepper, sliced thin
- 1 small red onion, sliced thin
- 2 handfuls of baby arugula
- Garlic powder
- Olive oil
- Peter Lugers Sauce
Salt and pepper the steak and put to the side.
Preheat oven to 400 degrees. Put the pepper and onions on a baking sheet. Drizzle olive oil, salt, pepper and garlic powder over the vegetables. Mix so they are coated.
Put in oven for 20 minutes, mixing them after 10 minutes.
Heat a grill pan until very hot. Put the skirt steak on the pan and cook 6 minutes per side. (You can always broil or pan fry it.)
Remove steak and let stand for at least 10 minutes.
Plate your arugula between 2 dishes. Add a little sea salt on each. Put the sliced steak over the arugula and add the vegetables. Pour a little Peter Lugers Sauce … Enjoy!
