Delicious Biscuits

 My friend Judith gave me her recipe. Ingredients: 3 cups flour 2 cups milk (add a splash more if batter seems too thick) 3 tsp baking powder 2 tsp salt 3 heaping tablespoons mayonnaise (I used light mayo) Directions: Mix well. Spoon into a 12-muffin tin. Bake at 350 degrees for 18-20 minutes, depending on the heat of your oven. These muffins do not brown so you can put them under the boiler for a minute. By Sharon Feldman

Grilled Sweet Italian Sausages with Vegetable Slaw

 Serves: 4 Ingredients: 1 package Sweet Italian Sausages (5-6 links) 2 limes 1 orange 1 tablespoon honey 1 package vegetable slaw ¼ cup lightly salted peanuts, chopped (I did it whole) 1 bunch scallions, thinly sliced, and divided Directions:  In a large bowl, grate the zest of 1 lime and orange. Squeeze in the juice from both limes and orange. Whisk in the honey. Add the vegetable slaw, peanuts and half of the scallions. Toss to combine. Season with salt and pepper and set aside. Shrimp and Spaghetti Squash

 Ingredients: 1 medium spaghetti squash 12 large peeled and deveined shrimp 4 cloves garlic, chopped 8-10 black olives, quartered 3 tablespoons olive oil ½ pint cherry tomatoes (halves or left whole if small 1/3 cup sherry 2 tablespoons butter Directions: Preheat oven to 400 degrees. Halve the spaghetti squash and remove the seeds.  Salt and pepper the inside. Drizzle olive oil and rub oil front and back. Place the spaghetti squash cut side down. Score the outside of the squash. Cook the squash for 45 minutes or until you can easily pierce the flesh with a fork. Remove from oven an let cool....

Air Fryer Uncured Chicken Sausage, Peppers and Onions

 Ok, we are enjoying the air fryer. Ingredients: 1 package uncured chicken, bacon and cheddar sausage 1 green pepper, sliced 1 yellow pepper, sliced 1 sweet onion, sliced Salt and Pepper to Taste Directions: Preheat air fryer to 370 degrees (takes about 3 minutes). Slice the peppers and onions. Add the sausage to air fryer and cook for 10 minutes. After 10 minutes, flip the sausage and add the peppers and onions. Cook an additional 10 minutes. Season with salt and pepper if you wish. ++I left the salt off as sausages can be salty. ++ Use whatever peppers or sausage you like.

Chicken Cutlets with Guacamole Tomato Topping

 Serves: 2 Ingredients: 2-boneless, skinless chicken breasts 3 cloves garlic, minced 2 tablespoons balsamic vinegar 2 tablespoons olive oil 1 tablespoon Italian seasoning ½ cup of cherry tomatoes, halved ½ teaspoon salt ¼ teaspoon ground pepper   Topping: Pre-packaged guacamole ½ pint cherry tomatoes 2-4 slices of mozzarella   Directions: Combine chicken, balsamic vinegar, garlic and Italian seasonings in a large bowl. The local market has slowed a bit during the past few weeks, probably due to the beginning of summer, Father’s Day, slightly higher mortgage rates (up to 3% now approximately from a low of 2.5% in February), and a weaker stock market. Local inventory levels are up a little bit, as they are also up nationally. I saw a statistic last week which said that inventories are up about 6% in the nation. A 6% increase is not huge considering the extremely low levels we’ve had for such a long time.  The mixture of these seasons will knock your socks off!   Ingredients: 4 – 4-ounce coho salmon filets 1 teaspoon grainy mustard 2 large cloves garlic, minced 1 teaspoon minced shallots (a little more for more of a kick) 2 teaspoons fresh thyme leaves, chopped, plus a little more for garish Juice of ½ lemon Salt and pepper to taste Lemon slices for serving   Directions: Heat broiler and line baking sheet with parchment paper. Ground Turkey and Zucchini Meatloaf with Peace Glaze

 Yields: Serves 6 Ingredients: 1-1/4 lbs ground turkey 1 cup coarsely grated zucchini ¾ cup sweet onion, finely chopped ½ cup dry seasoned breadcrumbs or panko crumbs (or 3 slices bread, torn and soaked in milk) 1 large egg 1 teaspoon salt ½ teaspoon ground black pepper 2-3 large garlic cloves, minced ¼ cup peach preserves (or apricot) 4 teaspoons Dijon mustard (I used French Grainy) ** optional ¼ cup chopped fresh parsley ** optional few leaves fresh basil   Directions: Preheat oven to 350 degrees. Air Fryer Boneless Pork Chops

Andy made this dry rub and it was delicious.  And the pork was very moist.    Ingredients: 4 boneless pork chops 1 tablespoon cumin 1 tablespoon chili powder 1 tablespoon ground garlic 1 tablespoon onion powder 1 tablespoon smoked paprika ½ teaspoon cayenne pepper (if you want spicier use more) ½ teaspoon stevia (or 2 teaspoons brown sugar) 2 tablespoons sea salt 1 tablespoon ground black pepper Directions: In a medium bowl, mix the seasonings.
