Slow Cooker Raspberry Chicken Legs 

 Ingredients: 5 chicken legs, skin removed 1/3 cup seedless raspberry spreadable fruit 3 tablespoons reduced sodium soy sauce 1 teaspoon spicy brown mustard ¼ teaspoon pepper 2 tablespoons cornstarch 2 tablespoons cold water   Directions: Place chicken in a 3 quart slow cooker. In a small bowl, combine the spreadable fruit, soy sauce, mustard and pepper. Mix and pour over the chicken. Cook on low for 5-6 hours, or until meat is tender. Remove chicken to a serving platter. Air Fryer Porterhouse Steak 

 So we bought a new toy. Here’s another recipe. Ingredients: 2 – 16 ounce Porterhouse steaks 1 tablespoons olive oil or melted butter ½ teaspoon salt ¼ teaspoon ground pepper   Directions: Pre-heat the air fryer to 400 degrees. Make sure your steaks are room temperature. Rub the oil or butter all over the steaks and season with the salt and pepper. Put the steaks in the air fryer for 6 minutes then turn them over and continue for another 6 minutes. Let the steaks rest for 5 minutes before cutting into them. Enjoy! By Sharon Feldman

Sometimes you Get Spotted at a Costco (which some people might consider a Taj Mahal) on Rockaway Turnpike. Shrimp Scampi over Zucchini Noodles

Ingredients: 2 lbs. of shrimp, peeled and deveined 12 cloves garlic, sliced thin 1 package of spiraled Zucchini noodles (or do it yourself) 1 stick unsalted butter ¼ cup olive oil 1 cup liquid (I used ½ cup white wine, ½ cup chicken broth) Salt and pepper to taste 2 lemons, juiced 2 tablespoons chili flakes (optional) 1 handful parsley, chopped   Directions: In a large, heated pan, add the butter and oil. Dry Rub Air Fryer Chicken Thighs

 Ingredients: 4 bone in, skin on, chicken thighs 2 teaspoons paprika 1 teaspoon Italian Seasoning 1 teaspoon Brown sugar ½ teaspoon salt ½ teaspoon pepper 2 tablespoons olive oil   Directions: Pat the chicken thighs with a paper towel. Add them to a medium sized bowl. In a small bowl. Combine paprika, Italian seasoning, brown sugar, salt and pepper.  Add the olive oil to the bowl of chicken and sprinkle with the seasonings until fully coated. Skillet Honey Lemon Chicken Cutlets

 1 pound boneless, skinless chicken breast cutlets, thinly sliced 1 tablespoon olive oil 1 teaspoon kosher salt ½ teaspoon ground pepper ¼ cup of honey ½ cup chicken stock ¼ cup FRESH lemon juice 1 tablespoon Dijon mustard 1 lemon, sliced ¼ cup chopped parsley (optional)   Directions: Heat oil in a large skillet over medium high heat. Season both sides of chicken with salt and pepper. Sear the chicken on both sides, for about 3 minutes per side. Remove to a plate. Whisk together honey, lemon juice, chicken stock and Dijon mustard. Dry Rub Air Fryer Pork Tenderloin

 We just got an air fryer so we’re trying some new recipes.  Ingredients: 1 pound whole pork tenderloin 1 teaspoon garlic powder 1 teaspoon cumin 1 teaspoon oregano 1 teaspoon dried thyme 2 cloves garlic, minced 1 teaspoon olive oil (or avocado oil) 1 teaspoon salt ½ teaspoon pepper   Directions: In a small mixing bowl, combine all of the spices, salt, pepper and oil to make the rub. Place the pork tenderloin on a cutting board and coat all over with the rub. Place in the air fryer basket and cook at 400 degrees for 20 minutes.  Ingredients: 1-1/2 pounds salmon fillets 1 tablespoon kosher salt 1 teaspoon fresh thyme, chopped 1 teaspoon DRY oregano 1 teaspoon fresh basil leaves, chopped ½ cup Dijon mustard 1-1/2 cups mayonnaise ¾ cup crumbled feta cheese 1 cup frozen chopped spinach, thawed and drained 1 package frozen puff pastry, thawed 1 egg white, beaten for wash PARCHMENT PAPER   Directions: Preheat oven to 375 degrees.  Sprinkle salt on both sides of the salmon. Oven Roasted Corned Beef and Cabbage

 I didn’t measure anything//and it came out wonderful! Will never make it on stovetop again.   Ingredients: 1 corned beef White or red potatoes (about 6-8) medium, quartered 4 -6 carrots, cut in thirds 1 medium size cabbage, cut in half then sliced into ½ moons 1” thick Coarse grain mustard Salt Pepper Olive oil   Directions: Heat oven to 350 degrees.
