Oven Roasted Corned Beef and Cabbage

 I didn’t measure anything//and it came out wonderful! Will never make it on stovetop again.   Ingredients: 1 corned beef White or red potatoes (about 6-8) medium, quartered 4 -6 carrots, cut in thirds 1 medium size cabbage, cut in half then sliced into ½ moons 1” thick Coarse grain mustard Salt Pepper Olive oil   Directions: Heat oven to 350 degrees. Uncured Chicken Sausage, Cabbage and Orecchiette

 Ingredients: 1 package Boars Head Uncured Chicken Sausage, cut into rounds or quartered (or any type of sausage you like) 1 large sweet onion, cut into medium size, diced 2 tablespoons smoked paprika 1 head of cabbage, sliced into strips 1-1/2 sticks of unsalted butter 1 cup of Orecchiette (or use any pasta you like) Salt and pepper to taste   Directions: Heat a large pan.  Add the cut sausages and brown.  Add the butter.  Mix the butter and sausages to incorporate.  Add the onions.  Sautee until onions start to soften.  Add the smoked paprika.  Mix through. Baked Dijon Crusted Salmon

 Ingredients: 1-1/2 pounds of Coho Salmon (or Sockeye or King or individual filets) ¼ cup fresh parsley, finely chopped ¼ cup Dijon Mustard 1 tablespoon fresh lemon juice 1 tablespoon olive oil (you can use avocado) 3 garlic cloves, finely chopped Salt and pepper to taste   Directions: In a medium bowl, combine the parsley, mustard, lemon juice, olive oil, garlic, salt and pepper and mix. Place the salmon on a parchment lined baking sheet. Coat the top of the salmon with the herbed mustard mix. Heat oven to 375 degrees. Bake the salmon (depending on thickness) 18-20 minutes. Turkey Cutlets with Apple Slices

 Ingredients 2 tsp olive oil 1 pound thin turkey cutlets 1 granny smith apple, thinly sliced 1/2 cup onion, diced 1 teaspoon fresh thyme 1 clove garlic, minced 1 cup chicken broth 2 cups arugula Juice of 1 lemon (use some zest as well) 1/4 cup balsamic vinegar Salt & pepper, to taste   Directions Heat oil in a heavy bottomed skillet over medium heat. Pork Caprese

 Ingredients: 1 pound boneless center cut thinly sliced pork chops (4 pieces) 1 tablespoon olive oil Salt and pepper ¼ cup balsamic vinegar 4 cloves minced garlic 1 pint of grape tomatoes, halved 2 teaspoons fresh basil, torn 4 slices mozzarella Directions: In a large skillet over medium high heat, heat the oil. Season cutlets with salt and pepper. Cook until golden brown, approximately 6 minutes per side. Remove to a plate. Add balsamic vinegar and garlic and cook for a minute.
