Serves: 4
Ingredients:
- 4 boneless skinless chicken breasts
- 3 tablespoons butter
- 1/3 cup of chicken broth
- 4 tablespoons freshly squeezed lemon juice
- 1 tablespoon honey
- 3 teaspoons of garlic, minced
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
Directions:
Preheat oven to 400 degrees. Oil a baking sheet or large casserole dish.
Melt butter in skillet over medium high heat. Add the chicken and cook 3-4 minutes each side until browned. Transfer to the prepared baking sheet.
In a small bowl, whisk together chicken broth, lemon juice, honey, garlic, Italian seasoning, salt and pepper.
Pour sauce over the chicken. Bake 20-30 minutes. (If the chicken is thick, it’s closer to 30 minutes). Baste every 5-10 minutes.
Serve with your favorite sides. I served this with low sodium yellow rice, cabbage slaw and watermelon.
